We've been eating dinner out on our patio (screened in, thank Jesus) after the afternoon thunderstorms. Here in South Florida, it rains everyday in the summer. Like clockwork. Depending on where you are, anywhere from 3 pm- 5pm the rain will come, scare the daylights out of you, your pets, and your kids, and then pretend it never happened.

It's not just rain, either. It's legitimately like being in a miniature hurricane: strong gusts of winds, the rain is hard and flying sideways, trees end up missing branches, the lightning is right over you and the thunder is loud. Tornadoes are unlikely but do happen sometimes.
And like I said, it happens everyday. Eventually, you are numb to the summer storms, and it's more of an inconvenience than anything to worry about. Welcome to the sunshine state!
A couple hours after the rain, we end up eating dinner on the patio and every day in June so far, we've been drinking this sparkling ginger strawberry lemonade. It brightens up the day after basically being cloud-covered for the last two months.
We call this strawberry ginger fizz: It's bright, refreshing, the strawberry puree is so fresh and the zippy, tiny-bit-spicy-sweet ginger syrup take this lemonade to the top. Oh, and of course, the club soda. Wouldn't be fizzy without it.
I make ginger syrup all the time because I always have a giant knob of ginger left in my fridge after using the small amount most recipes need, this is a great way to use it up and also great for anyone who's sick or nauseous in your house. It makes a mean and refreshing ginger ale.
Unlike my addictive strawberry lemonade (where I make a strawberry syrup instead of just pureeing the strawberries) this uses the strained puree and if you want to, you could optionally create the lemon syrup like I did:
Make a simple syrup (1:1 ratio of water and sugar) like the ginger syrup, but add in one or two lemon's worth of lemon zest and juice. You could make them fine zest bits or big fat strips that are easy to pull out, but let them simmer in the simple syrup until it's full of lemon flavor, about 10-15 minutes.
This lemon syrup I like better than using lemonade, because it's concentrated lemon goodness without diluting it or the fizziness down with water.
To wow people, layer the syrups and strawberry puree carefully into tall glasses, then pour the club soda over. Add a nice straw or those cute long cocktail spoons and mix the concoction. Ice optional.
Yes, you can use carbonated lemonade or just plain lemonade + club soda, but I like controlling how sweet my drinks are and the flavor of the lemonade. Some lemonades taste like acid going down your throat, so make sure it's a lemonade you love and know.

Sparkling Ginger Strawberry Lemonade
Sweet, bubbly, tangy, this sparkling ginger strawberry lemonade is THE drink of the summer! It's easy and inexpensive to make, with fresh ginger, lemons, and strawberries!
Ingredients
- 1 lb strawberries, washed
- ½ liter of your favorite lemonade
- OR 2 cups lemon simple syrup
Ginger Syrup:
- ! knob, about 3-4 inches fresh ginger, peeled and chopped roughly
- 4 cups water
- 4 cups sugar
- ½ liter club soda
Instructions
- In a medium sized saucepan over medium heat, add ginger, water and sugar, and stir well. Allow the water to come to a simmer at most, never to a boil, and simmer for about 15-20 minutes, or until ginger flavor is as strong as you like.
- Puree the strawberries in a blender, then strain them through a mesh sieve. Set aside.
- To assemble in a carafe, pour in lemonade, strawberry puree, 1 cup ginger syrup, and club soda then mix well.
- To assemble in tall glasses with layers: carefully pour in 3 tablespoon syrup(s), spoon 2 spoonfuls of strawberry puree on top carefully, then add your lemonade, if using, and club soda. Stir well and add ice.
- Serve immediately.
Notes
You can play with the amounts of everything to your tastes!
