Anyone else feeling like they ended up in a tropical country, or is that just me in this heat wave?
I really leaned into it with this recipe: a Pineapple Crush. A bright and sunny cocktail that's sweet and easy to drink, made with pineapple chunks, juice, and rum. If you don't feel like you're experiencing a day in the Caribbean, make this and then walk outside right now.
It's a tasty way to cool off in the summer, or taste like you're on a tropical vacation in the winter.

Pineapple Crush Drink Ingredients

- Fresh Pineapple Chunks - the fresh flavor is much different from canned pineapple, and it really shines in this drink.
- Granulated Sugar - this is for making one cocktail. If you're making this for a crowd, you're going to make a simple syrup.
- Lime Juice
- Rum - I used Malibu rum flavored with mango (so good!) but a dark rum works very well here.
- Pineapple Juice - you're going to want to buy pineapple juice with no sugar added.
- Pineapple Leaves, a lime wedge, and a Pineapple wedge - these make for a beautiful garnish. If you don't have them, a sprig of fresh mint is a great substitute.
Instructions

Step 1 | Muddle the pineapple chunks in a cocktail shaker with the sugar and lime juice. Crush the pineapple well.

Step 2 | Add the ice and pour in the pineapple juice and rum. Put the lid onto the cocktail shaker and shake vigorously for around 30 seconds to get the drink nice and cold.

Step 3 | Pour the cocktail through the lid into a rocks glass or tall highball glass filled with ice. Garnish with a pineapple wedge and pineapple leaves.
How to Make a Pitcher for a Crowd
If you want to make a pitcher of Pineapple Crush for a Crowd, don't sweat it. It's easy to make, all you need to do is make a simple syrup.
Simple syrup for this is 1 cup of water and 1 cup of sugar and simmer over medium heat for about 10 minutes until the sugar dissolves. Boom, simple syrup! Make this ahead of time so it can cool down.
Pineapple Crush Pitcher
To make a 64 ounce pitcher of Pineapple Crush, you'll want
2 cups fresh pineapple chunks
48 ounces pineapple juice
24 ounces rum
¼ cup lime juice
1 cup simple syrup
Mash the pineapple chunks at the bottom of your pitcher, then add ice and pour everything else in. Give stir, a taste, and adjust as needed, then serve!

Variations and Pro Tips
- Add a coconut liqueur or coconut rum to your pineapple cocktail.
- Bahama Mama - add orange juice, coconut rum, and a splash of grenadine!
- Mix in strawberry simple syrup instead of sugar and you have a delicious strawberry pineapple cocktail.
- Top off with soda - Make the drink fizzy by topping it off with lemon lime soda or club soda
- Different spirits - try vodka or even gin instead of the rum to give it a different vibe.
