This sweet and delicious Love Martini is the perfect libation for a beautiful Valentine's Day dinner. Made simply and easily with cranberry juice, peach schnapps, and coconut rum then garnished with pretty fresh strawberries!

I love making restaurant copycat recipes, especially when they are so simple to make. Take this Love Martini: one of my favorite drinks from The Melting Pot.
It's the perfect Valentine's Day martini: an easy peach schnapps and rum drink with the added sweet and tart flavor of cranberry juice. Literally, that's it. And if you're not careful you can drink three glasses no problem because it's really that tasty!

How to Make a Love Martini
This valentine's drink is really simple to make with only three ingredients...well, four if you count the fresh strawberry slices for garnish which if you know me, you know I love fresh fruit in my cocktails.
Ingredients
Coconut Rum. The menu at The Melting Pot specifically says Malibu Rum, but any coconut rum you like is perfect for this.
Peach Schnapps. This fruity and sweet liqueur is a great mixer that rounds out the flavor of this Valentine's Day drink.
Cranberry Juice. Use regular old cranberry juice cocktail, unless you really don't like sweet cocktails, then use 100% pure cranberry juice and make a simple syrup (boil 1 part water to 1 part sugar, til the sugar dissolves then cool the mixture and boom! Simple Syrup!)
Sliced Strawberries. Used as a garnish, the slices have the hull cut out (the green and white bits) leaving the slices with a V-shape cut out at the top of heart-shaped strawberries.
To make the Love Martini, simply add the coconut rum, peach schnapps, and cranberry juice to a cocktail shaker halfway filled with ice. Give it a good shake for about 30 seconds, then pour into your martini glassware and serve with the strawberry slices.

Love Martini Cocktail
Ingredients
- 4 ounces coconut rum, Malibu Rum is used at the restaurant but any coconut rum you like is fine
- 2 ounces peach schnapps
- 8 ounces cranberry juice
- Sliced strawberries, for garnish
Instructions
- In a cocktail shaker filled halfway with ice, pour in the coconut rum, the peach schnapps, and the cranberry juice.
- Close the cocktail shaker tightly and shake vigorously for about 30 seconds to blend the ingredients together.
- Pour the cold cocktail into two martini glasses then garnished with sliced fresh strawberries.
- Serve immediately.
