Iced Guava Passionfruit Drink (Starbucks Copycat)

This iced guava passion fruit drink is identical to the pink Starbucks drink, made with a homemade pineapple ginger syrup, passionfruit and guava juices, then shaken up with coconut milk and served over ice for a creamy tropical summer drink any time!

Released on Memorial Day was this year's spanking new Pink Drink from Starbucks: the Iced Guava Passionfruit Drink.

Too bad it came out in the midst of the whole world falling apart.

I live in Florida and besides dodging Florida Man, I also am dealing with the excessive heat and being under quarantine (mostly so I can dodge Florida Man) so my Starbucks runs are few between. A delicious, fruity, tropical paradise in a cup sounds perfect while the fruity tropical paradise I live in is on fire at a heat index of 102 degrees F every day.

What's in this recipe

I was able to find all the ingredients easily at my local grocery store and it didn't need a lot of ingredients:

• Passion fruit juice
• Guava juice
• A hearty splash of tart cherry juice for color (optional)
• Fresh ginger root
• Pineapple juice
• Coconut milk
• Sweetener for the syrup
• Water and ice

And what I love about this recipe is all the ingredients can be customized in volume. I personally added significantly more ginger to one of the batches I recipe tested to give it a zippy, spicy ginger kick and it was so good, so don't be afraid of adding more of an ingredient you love.

Another fantastic thing about this guava coconut milk drink is that it's vegan, it's great for those who are lactose intolerant but still want a creamy drink and it can easily be turned keto and paleo by swapping the sugar for monk fruit sweetener or stevia. Guava is also super healthy with 3 times more vitamin c than an orange, full of manganese, and can aid in digestion. This drink is a total winner!

How to make the Iced Guava Passionfruit Drink

The pineapple ginger syrup is the 'most difficult' part of this recipe. And considering you're simply putting fresh ginger slices in pineapple juice and sugar over a medium heat, this should tell you how easy the rest of the recipe is.

1. Make the ginger pineapple syrup ahead of time and put in the fridge to cool
2. Mix together the syrup, guava juice, passionfruit juice, and coconut milk together in a pitcher. Splash in that cherry juice if you're using it.
3. Serve over ice.

One, two, three. So easy!

Make it Thirsty Thursday approved

So why did I add the Iced Guava Passionfruit Drink to my Thirsty Thursday? Because it's a delicious kid-friendly drink on its own, but if you want to imbibe in a nice Hawaiian vacation this weekend, add some coconut rum or vodka to your pitcher! My recipe makes a pitcher's worth, so add about ½ cup of your favorite spirit to the pitcher.

Ingredients 

• ▢ 1 cup 500 mL pineapple ginger syrup
• ▢ 2 cups 1 L guava juice
• ▢ ½ cup 250 mL passion fruit juice
• ▢ ⅛ cup 30 mL tart cherry juice (optional)
• ▢ 1 can, 13.5 oz coconut milk
• ▢ Ice, for serving

Pineapple Ginger Syrup

• ▢ ½ cup 250 mL pineapple juice
• ▢ ½ cup 250 mL cool water
• ▢ 1 piece 3 inches fresh ginger
• ▢ ½ cup 100 g granulated sugar

Instructions 

• In a small saucepan, mix all the ingredients for the pineapple ginger syrup together over medium heat. Let simmer until all the sugar dissolves. Pour into a heat-safe container with a lid and let cool completely in the refrigerator.
• Once cool add pineapple ginger syrup, guava juice, passion fruit juice, tart cherry juice, and coconut milk to a blender and pulse until well blended or simply stir the ingredients together in a large pitcher.
• Pour over ice in serving glasses and enjoy.

Thirsty Thursday Approved!

Add about ½ cup of coconut rum or vodka to the pitcher and stir to incorporate.

Separation is natural

Coconut milk has a tendency to separate the coconut cream from the water. It's perfectly normal if you see the difference. Give a quick whiz in the blender or stir with a spoon to incorporate
