Iced Guava Passionfruit Drink (Starbucks Copycat)
This iced guava passion fruit drink is identical to the pink Starbucks drink, made with a homemade guava pineapple ginger syrup, passionfruit and guava juices, then shaken up with coconut milk and served over ice for a creamy tropical summer drink any time!

- 1 cup 500 mL pineapple ginger syrup
- 2 cups 1 L guava juice
- ½ cup 250 mL passion fruit juice
- ⅛ cup 30 mL tart cherry juice (optional)
- 1 can 13.5 oz coconut milk
- Ice for serving
Pineapple Ginger Syrup
- ½ cup 250 mL pineapple juice
- ½ cup 250 mL cool water
- 1 piece 3 inches fresh ginger
- ½ cup 100 g granulated sugar
In a small saucepan, mix all the ingredients for the pineapple ginger syrup together over medium heat. Let simmer until all the sugar dissolves. Pour into a heat-safe container with a lid and let cool completely in the refrigerator.
Once cool add pineapple ginger syrup, guava juice, passion fruit juice, tart cherry juice, and coconut milk to a blender and pulse until well blended or simply stir the ingredients together in a large pitcher.
Pour over ice in serving glasses and enjoy.

Add about ½ cup of coconut rum or vodka to the pitcher and stir to incorporate.
Separation is natural
Coconut milk has a tendency to separate the coconut cream from the water. It's perfectly normal if you see the difference. Give a quick whiz in the blender or stir with a spoon to incorporate
