These bubbly apple cider mimosas scream fall and are fun, festive twists on the classic mimosa.
We went to the apple orchard this year (and if you've been following me, you know how excited I am to finally be able to celebrate autumn!) and picked up a ton of fresh apple cider. I'm not one to ignore apple cider season!
I definitely put the cider to great use, so if you're interested in learning other recipes using up your apple cider, I have some great recipes including other cocktails like apple cider mules and sparkling apple cider sangria!
So you know what is perfect for a fall brunch? A fall brunch cocktail! This apple cider mimosa recipe, topped with a fresh apple slice and plenty of sparkling wine (or that sparkling apple cider for a non-alcoholic yet delicious apple cider mimosa).
Cider is literally in my fridge right next to the pitcher of sweet tea all season long, so cider cocktails are abundant when we have guests, and a bubbly bottle of champagne is sure to be around this time of year.
Technically, a traditional mimosa is cocktail made with sparkling wine, usually champagne, and citrus juice, orange juice typically. But I feel like this apple cider cocktail is the perfect fall twist on it.
It's a must have for the holiday season!An autumn brunch, thanksgiving dinner --better yet, thanksgiving brunch!-- holiday parties, they all deserve a bubbly cocktail. We deserve a great holiday season this year after all the pandemonium of being in this 'panorama'! 😉

How to Make Apple Cider Mimosas
Making these fall cocktails is super simple, which is why I love it so much! Pour into a champagne glass part apple cider and top with crisp champagne!

You can make these as easy two ingredient apple cider mimosas by using your favorite champagne and apple cider garnished with a thin apple slice.
You can add different mixers and spirits to the mimosa, like caramel vodka, cinnamon whiskey like Fireball, bourbon, or brandy. You can add some caramel syrup or maple syrup to decorate the inside of the glass, too.
Add a cinnamon sugar rim by dipping the rim of the glass into some simple syrup, maple syrup for a fall or caramel, then mixing ground cinnamon or pumpkin spice and sugar on a shallow plate and then gently dipping the edge of the glass into the cinnamon sugar mixture. It's cute and it's great for the kiddos.
Oh don't think I left the kids out! Swap the alcohol for sparkling cider or sparkling grape juice! If you can't find it just mix apple juice or white grape juice with club soda for a bubbly treat. Perfect way to make a great mocktail!
What is Champagne?
A lot of people think of champagne as 'fancy bubbly wine' or even think of all sparkling wines as champagne, but it's not. Champagne is wine that must come from the Champagne region of northeast France.
The soil there is rich in limestone and chalk, so there's lower alcohol content and higher acidity in the wine. The regulations for making champagne are incredibly strict, unlike here in the U.S. where the sparkling wine-making methods are not regulated.
Do I have to use Champagne?
If you're not a champagne fan or just don't want to use it, you can always use sparkling white wines. Use your favorite! There's no point in making a delicious drink if you're not enjoying it.
Tips for the Best Mimosas
Use champagne flutes or tulip glasses for long-lasting bubbles. Wide mouth glasses, like the coupe (even though it's a fave of mine), give the bubbles ample space to rise and pop at the surface. Keep your sunday brunch bubbly, y'all!
Mimosas are best the day of, the bubbles just don't last! If you're wanting to maybe make ahead a pitcher , mix the apple cider, spirits, and mixers together in a pitcher a couple of days before. Bonus points if you add a cinnamon stick or two and some apple slices to mingle in there. Then add the champagne before serving.

Ingredients
- 1 cup apple cider
- ½ cup champagne or sparkling white wine
- Thin apple slices, garnish
Instructions
- Divide cold apple cider evenly between two champagne flutes.
- Top each glass with cold champagne.
- Add thin apple slices to the rim for garnish and serve immediately.
