Strawberry Mojito

It's a snap to make with fresh strawberries, mint leaves, white rum, and bubbly club soda you'll feel like you're on vacation all through the summer months. - ½ cup fresh strawberries hulled
- ½ cup fresh mint leaves
- 2 tablespoon granulated sugar OR simple syrup
- 2 tablespoon fresh lime juice
- Crushed ice
- ½ cup white rum
- Club soda for topping
- Slices of strawberry or lime wheels ro sprigs of mint for garnish
In two highball glasses, muddle strawberries, fresh lime juice, granulated sugar, and mint leaves with a muddler or the back of a spoon. You don't want to destroy the fresh mint leaves, just bruise them a little to release the oils.
Add ice, pour in the silver rum,, and top with soda water.
Garnish with lime slices, slices of strawberry, or a sprig of mint.
How to Make a Strawberry Mojito Pitcher Recipe
For a larger group, let's make a pitcherful of the good stuff. It's made a little differently than the in-glass traditional version. You'll make a strawberry puree in the blender and a minty simple syrup (1 part water, 1 part sugar, and a few mint springs), since muddling is going to be difficult in a pitcher.
The rest is simple: ice, rum, club soda, stir. Then serve to your guests!
