  • 1 teaspoon fresh lemon juice
  • 1 cup sparkling white wine or chilled Prosecco or champagne

Instructions

Prepare the Strawberry Puree

  • Rinse and hull the strawberries.
    8 fresh strawberries
  • In a blender, combine the strawberries, sugar, and lemon juice. Blend until smooth.
2 teaspoons granulated sugar, 1 teaspoon fresh lemon juice, 8 fresh strawberries
  • Strain through a fine mesh sieve for a smoother texture (optional).

Assemble the Cocktails

  • Evenly divide the strawberry puree between two champagne flutes.
  • Carefully pour the chilled sparkling wine over the puree in each flute, allowing the fizz to settle before topping off to avoid overflow.
    1 cup sparkling white wine

Garnish and Serve

  • Stir the cocktails gently to mix the puree and wine. Garnish each glass with a whole or sliced strawberry on the rim.
  • Serve immediately.

Notes

Chef's Tips

  • Chill your champagne flutes before serving to keep the cocktail cool longer.
  • Adjust the sweetness of the puree according to the natural sweetness of your strawberries and your preference.

Rossini for a Crowd (64 ounce pitcher, 10 servings)

  • 2 pounds fresh strawberries, plus extra for garnish
  • ½ cup granulated sugar (adjust based on sweetness of strawberries)
  • 2 tablespoons fresh lemon juice
  • 1 bottle (750 ml) Prosecco or another dry sparkling wine, chilled

Make Ahead Tips

  • The strawberry puree can be made up to 2 days ahead and stored in the refrigerator. Cover it tightly to maintain freshness.
  • For best results, mix the cocktail just before serving to maintain the sparkling wine's effervescence.
  • If preparing for a very large crowd, keep extra bottles of chilled champagne or prosecco on hand and mix them with the puree in batches to ensure the drink stays fizzy and fresh throughout the event.
