Ingredients

  • 6 cups apple cider
  • ¾ cup pumpkin puree pure pumpkin, not pumpkin pie filling
  • ½ cup apricot nectar
  • cup light brown sugar
  • teaspoon pumpkin pie spice
  • 2 teaspoon vanilla extract
  • Cinnamon sticks garnish

Instructions

  • In a large pot over medium heat, whisk together all the ingredients besides a few cinnamon sticks reserved for garnish. Bring to a gentle simmer, do not boil.
    6 cups apple cider, ¾ cup pumpkin puree, ⅓ cup light brown sugar, ½ cup apricot nectar, 1½ teaspoon pumpkin pie spice, 2 teaspoon vanilla extract
  • Simmer for 15 minutes, stirring occasionally until everything's fragrant.
  • Carefully pour the hot pumpkin juice through a fine mesh sieve lined with cheesecloth into a large, heat-safe pitcher to remove the excess pumpkin pulp and make the juice smooth.
  • Let it cool for 10 minutes before putting the pitcher into the fridge to chill. Serve cold over ice for that Hogwarts Express vibe with a cinnamon stick for pizazz.

Make Ahead, Storage and Freezing Instructions

  • Make ahead: Pumpkin juice is even better the next day! Just let it cool completely, strain it, and refrigerate it in a sealed pitcher or bottle.
  • Storage: It’ll keep in the fridge for up to 4–5 days. Some settling is totally normal, just give it a good stir or shake before serving.
  • Can I freeze it? Yep! Freeze it in a freezer-safe container (leave a little room for expansion), then thaw in the fridge overnight. You can even freeze it in ice cube trays to chill your next batch without watering it down.
