Slow Cooker French Onion Pot Roast
French Onion Pot Roast is so easy to throw together on any cold day or for Sunday supper. Chuck roast is braised in the slow cooker for hours with sweet onions and herbs to become richly seasoned and fork tender, so you can relax knowing dinner is making itself tonight.

- 3 tablespoon vegetable oil
- 1 2 pound chuck roast, boneless
- 3 cloves garlic
- 3 large yellow onions thinly sliced
- 2 cups beef broth or consomme
- 1 tablespoon Worcestershire sauce
- ½ teaspoon dried thyme
- 1 bay leaf
Pat down your chuck roast and season generously with kosher salt and freshly ground pepper on all sides. Heat a large saute pan over medium-high heat. Add the vegetable oil and when it begins to shimmer (meaning it's pretty hot), add the chuck roast to the saute pan and sear on each sides for about 2-3 minutes per side. Remove to a plate to rest.
Add the onions to the slow cooker, followed by the garlic, beef broth, Worcestershire sauce, herbs, and the chuck roast. The chuck should be at least half way submerged in the beef broth/consomme. Allow the roast to cook on the high setting for 5-8 hours, or until fork tender. Taste the jus and season with salt and pepper to taste.
Serve with bread, vegetables, and mashed potatoes.
