Chimichurri Sauce

Ingredients

  • 1 cup fresh flat leaf parsley
  • ½ cup fresh oregano
  • 3 cloves garlic minced or pressed
  • ½ cup extra virgin olive oil
  • ½ shallot grated to a paste
  • 1 lemon's juice about 3 tbsp
  • 1 tablespoon red wine vinegar
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt

Instructions

  • Put all ingredients into a blender or food processor and give a whirl for 30 seconds, until all herbs are finely chopped and well combined.
  • Let sit covered in the fridge for 1-4 hours, to let flavors combine.
  • Keep in the fridge for a week.
