This fresh and fruity strawberry gin smash is a super simple cocktail that is perfect for spring and summer!

Welcome to another installment of Thirsty Thursday, a series on Sweet Tea and Thyme where cocktails are the focus every Thursday.
Strawberry Gin Smashes are a fun, modern twist on a Tom Collins: instead of being bubbly lemonade with gin, it has muddled strawberries and a nice squeeze of lime. Who doesn't love boozy fruit at the end of a drink?

And the fact that is is such an easy, un-fussy drink makes it all the better. When it's hot and you just want to chill out with a cold drink, something you can quickly whip up (and have a little snack from) is a winning situation.

I made this strawberry gin smash on my Instagram stories (look in the highlight Thirsty Thursday for that!) and everyone loved how fast and simple it is to make. I rimmed the glass with a little lime and sugar, squeezed the juice into the glasses, muddled a couple of hulled strawberries with a nice little spoon of sugar.
Added gin, topped it with some bubbly water (okay it was ginger ale on the IG story because it was all I had at the time, but honestly, ginger ale, sprite, tonic water, soda water, whatever bubbly neutral-esque mixer works here). And that's it, so easy and so tasty, y'all.

Can I Make This Cocktail Ahead of Time?
Make the pitcher amount as per the Strawberry Gin Smash recipe notes, but leave the ice and soda until right before you serve. The longer the strawberries stay in, the more gin they become infused with and the more pink the drink becomes, win-win!

Strawberry Gin Smash
This fresh and fruity strawberry gin smash is a super simple cocktail that is perfect for spring and summer!
Ingredients
- ½ lime, cut into wedges
- 6 strawberries, hulled
- 2 tablespoon granulated sugar, less if you don't like a sweet drink
- 6 ounces gin
- Ice
- ¼ cup Club soda or tonic water
Instructions
- Add the juice of two wedges of lime to two glasses along with a tablespoon of sugar. Muddle the strawberries with the back of a spoon in the glasses until the sugar is mostly dissolved.
- Add ice, three ounces of gin to each glass, and fill the glass to the top with club soda.
- Enjoy!
Notes
To Make a Pitcher:
- Muddle ¼ cup granulated sugar, ¼ cup lime juice, and ½ lb of strawberries in a pitcher that holds at least 8 cups.
- Stir in 2 cups of gin then fill to the top with club soda. Pour into ice-filled glasses and garnish with a strawberry.
