Pink Flamingo Cocktail

A fruity and boozy drink, the flamingo cocktail is an easy summer cocktail that's also easily turned into your next cookout's party punch!

Welcome to another installment of Thirsty Thursday, a series on Sweet Tea and Thyme where cocktails are the focus every Thursday.

It's really strange to me how the kids go back to school so early nowadays. When I was starting second grade, school started after Labor Day.

The last 'hurrah' of summer, when the day was still plenty hot but the evening started getting nippy and we kids would come in from the pool or playing all day to have a cozy dinner that signaled that we would be back in school within another week or so and we had the Labor Day block party to look forward to.

Anyway, all that to say that this pink flamingo cocktail is my official ode to the end of Summer 2021! I'm a huge lover of pink drinks, and this one really is the epitome of everything summer: boozy, made with pineapple juice and lime, and bright pink, and it's totally going to be a star at my Labor Day barbeque.

It's the perfect poolside or cookout drink, and it can be made into a large quantity for pitchers.

How to Make it

A big reason why I like this flamingo cocktail recipe so much is because of how simple it is.

Shake all the ingredients in a cocktail shaker with ice, strain into a pretty cocktail glass. I used some gorgeous glasses from Anthropologie, but they're hard to get and forever backordered. Anthropologie does have other really gorgeous glasses, including the waterfall coupe and waterfall highball so I linked them

You can add club soda (especially if you're making a pitcher!) for some fun bubbliness. Add the bubbly water after you shake up the other ingredients in a cocktail shaker with ice.

Ingredients

Vodka. You can also use your favorite gin in this or even favorite white rum! Coconut rum is really good here.

Pineapple juice. This is what makes it a fruity drink, and it really gives us that summer feeling.

Fresh lime juice. If you don't want a tart little punch to your drink, you can omit it.

Grenadine. Grenadine is actually a pomegranate syrup, not dyed corn syrup or any of those other weird rumors you may have heard. If you don't have grenadine, the juice of maraschino cherries or tart cherry juice would work great as well for giving us that pretty pink color.

Pink Flamingo Drink for a Pitcher

Making this fruity flamingo cocktail recipe for a crowd? No worries, here's how to do it. I'll also have this in the recipe notes if you need it!

You'll need 2 cups vodka (or your favorite gin/rum), 2 cups pineapple juice, the juice of about 2 medium limes, and about 1 or 2 ounces of grenadine, just enough to make it nice and pink. You could also add in a bit of cranberry juice, though it'll change the flavor some.

Give it a thorough stir in your pitcher then serve in a highball glass over ice cubes.

Pink Flamingo Cocktail

Ingredients
  

  • 3 ounces vodka
  • 3 ounces pineapple juice
  • ½ ounce fresh lime juice
  • 1 ounce grenadine syrup
  • Ice for shaking
  • Mint leaves strawberries or lime slices, for garnish

Instructions
 

  • Add ice to your cocktail shaker. Add the spirit, pineapple juice, fresh lime juice, and grenadine to the cocktail shaker, cover tightly with its lid, and shake until the shaker is very cold, about 30 seconds.
  • Pour into cocktail glasses and garnish the edge of the glass.
  • Serve cold.

Notes

Don't like vodka?

You can use your favorite gin or white rum in this recipe. Coconut rum is great in this!
