Apple coffee cake is the ultimate fall dish. Moist, tender cake with diced apples folded in, a brown sugar-pecan swirl throughout, and an amazing cinnamon-sugar streusel on top. Oh, and don't forget that maple-vanilla glaze.

Ingredients

Apple Cake Batter

  • 2 cups all-purpose flour
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon kosher salt
  • ½ cup brown sugar
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted (1 stick)
  • 1 cup sour cream
  • 3 large eggs beaten
  • 2 teaspoon vanilla extract
  • 3 favorite apples I used Pink Ladies, peeled and diced

Brown Sugar-Pecan Swirl

  • ¾ cup light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • ¾ cup chopped pecans
  • ½ cup unsalted butter, melted (1 stick)

Struesel

  • ¼ cup unsalted butter very cold and diced
  • ½ cup all-purpose flour
  • ¼ cup light brown sugar
  • ¼ cup granulated sugar

Maple Vanilla Glaze

  • ¾ cup powdered sugar
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoon cream or milk
  • 2-3 tablespoon chopped pecans optional

Instructions

  • Heat oven to 350 degrees F. Grease a 9x13 inch baking dish with butter or baking spray.
  • Whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and both sugars in a large bowl.
  • Stir in melted butter, sour cream, eggs, and vanilla until smooth. Fold apples in, then pour into prepared pan.
  • In a medium bowl, stir together all the brown sugar pecan swirl ingredients together well. Pour over batter, then swirl using a knife or fork.
  • In another medium bowl, put all Streusel ingredients and use a fork, pastry cutter, or clean fingers, to blend ingredients until butter is pea sized and covered in the other ingredients. Sprinkle over the cake batter evenly and generously.
  • Put pan in oven and bake for 45 minutes or until toothpick inserted in the center comes out clean.
  • In a small bowl, combine all glaze ingredients using a whisk.
  • Wait until coffee cake is completely cool to glaze and eat.
